A Minnesota Classic
Inspired by Molly Yeh's classic tater tot hot dish recipe.
Process:
Brown meat (season it!) and remove it from the pan. Add aromatics (onion, celery, garlic, etc.) and seasoning to the pan; sauté until translucent. Add frozen veggies (green beans or peas) and cover the pan until they are warmed through. Add a can of cream of mushroom soup and return the browned meat to the pan. Mix. Transfer to a baking dish. Top with cheese and tater tots. Bake according to the tater tot directions. Garnish with parsley.
Ingredients:
1 lb ground beef or other ground meat
1 large onion (yellow or white)
4-5 stalks celery
3 cloves garlic
Your favorite seasonings (I like thyme + sage + red pepper flakes, but herbs de Provence or Italian seasoning blends work well also)
3ish cups frozen veggies (green beans or peas are most common)
1 can cream of mushroom soup
Handful of shredded cheese
1 bag tater tots
A few sprigs of parsley
Equipment:
Large skillet with a lid (I use Staub's All-Day pan)
9x13 baking dish
Heat-safe spatula or wooden spoon
Comments
