Demi, Minneapolis

To celebrate being fully vaccinated, we joined two friends for dinner at Demi, a tasting menu restaurant in downtown Minneapolis from Chef Gavin Kaysen. The food and experience were both amazing. I found it particularly cool that the seats are all in a U shape around an open kitchen, so we could watch the chefs preparing and plating each course. The chefs also do double-duty as servers, so they explain each dish as it arrives. (I even got some homemade ice cream making tips from the pastry chef!)

Chilled coriander, ginger, and fennel broth with dill oil


Parmesan flan with ginger froth, artichokes, and fried rosemary


"Carrot cake" with pea cream cheese, snow peas, and shiso


Ossetra caviar with a phyllo pastry nest and poached quail egg


Hamachi with rhubarb-fresno aguachile, green garlic, and spruce tips


Foie gras with grilled asparagus, black truffle, and Meyer lemon + warm baguette


Halibut with fava beans, baby turnips, radish, sorrel, nasturtium, and seaweed verjus beurre blanc


Smoked lamb belly ravioli with piperade, nettles, basil, and manchego


Guinea hen with lap xuong sausage, mustard greens, apricots, peas, and mustard jus


Bison with zucchini and potato salad, sunflower seeds, zucchini agrodolce, and fried green tomato


Frozen yogurt with cherry blossom custard, elderflower, almond, and butterflies


Chocolate tart with buckwheat, olive oil ice cream, and begonia


To close, a fresh homemade rice krispy treat - because in Minnesota we love a good bar.
